We are so glad you are back for Week 7, Lesson 1 of Faith & Fit: Fresh Food! Hopefully you are feeling your spiritual muscles growing stronger. Jane and I are praying for you. Don’t give up! Everyday Fit Physical Challenge:
Beginner Level: Today make it your goal to walk for 45 minutes or 2 miles. Walk at a pace that you are comfortable with and that you are still able to carry on a conversation. As always, check with your doctor before beginning any physical workout to be sure you are up for the challenge! For more information please read the following article on how to begin a walking program: Walking Program. As an alternate workout, try riding your bike for five miles. If you are fortunate enough to live by a bike trail, ride on that for your exercise this week. I live close to the Monon Trail and enjoy mixing up my workouts by riding several miles on the trail. I find it helps to have a destination in mind. One of my favorite things to do is to ride the the tea shop and have a cup of tea before I head back home.
Experienced Level: Today make it your goal to jog fro 3 miles or ride your bike for 10 miles. Jog or ride at a pace you are comfortable with and that your are able to carry on a conversation. By the end of your walk/ride you should be sweaty and tired but not exhausted. As always, check with your doctor before beginning any physical workout to be sure you are up for the challenge! Five Fast Miles
Everyday Fit Food Challenge:
Fresh Food
Today we want to look at the importance of eating organic when possible. I know organic food is more expensive, so it takes a bit of planning. Mary and I try to purchase meat and as many fruits and veggies that are organic as possible. If you need to make choices because of budget, please look at this resource: Dirty Dozen and Clean 15 by the Environmental Working Group. Each year they put out a list of the “dirtiest” and cleanest produce foods. Obviously, the ones to buy organic would be the ones on the dirty list because they are the most full of pesticides/contaminants.
Gardening
Another way to reduce expenses is to plant some of your own food. Over the years, I’ve planted all types of gardens, and you don’t need a huge plot to grow your own veggies. If you don’t have the time or any ground to plant in, a container garden is a perfect choice. You can plant all kinds of vegetables in containers that sit on a patio or deck. This article from Better Homes and Gardens Growing Vegetables in Containers has some wonderful tips and ideas.
For the last two years, I (Jane) have used Mel Bartholomew’s Square Foot Gardening method. I’ve ditched my terrible clay soil and have had good success with his methods. I’ve included a picture from one of my square-foot gardens. I have three of these in my yard and am amazed at how much they produce. I know I talked about gardening previously in Faith & Fit, but if you don’t currently have a garden plot, fall is actually a great time to build this garden and have it ready for spring planting.
Green Juicing
I am also a fan of green juicing. I have an Omega Big Mouth juicer, and it really helps me to get my veggies in for the day when I juice them. It’s important to use organic produce when you’re juicing. Here is one of my favorite recipes:
Jane’s Green Juice
1 large green leaf (Swiss chard, kale, romaine lettuce)
handful of small spinach leaves
4 or 5 sprigs of parsley
thumb-size piece of fresh ginger, peeled (if you like it)
2 carrots
1/2 cucumber
2 stalks celery
1/2 green apple
inch wide or so slice of lemon
Put the spinach, parsley, and ginger on the large green leaf and roll it up. Push it through the feeder. Immediately follow with the other ingredients. Drink right away. Green juices do not keep.
You’ll still want to eat some veggies so that you’re taking in the fiber you need each day. I like to drink my green juice for lunch and eat a salad with it.
